Wayne County Homemaker Recipe – Pork Chops with Jalapeno- Pecan Bread Dressing by Anna Ruth Correll – Z93 Country

PORK CHOPS WITH JALAPENO-PECAN BREAD DRESSING

6 boneless loin pork chops (1 inch thick; 1 ½ lb.)

¾ c. chopped celery  

½ medium jalapeno pepper, seeded and chopped

4 c. unseasoned cornbread stuffing mix

Trim pork. Spray large skillet with nonstick spray. Heat over medium heat.  Add pork; cook 10 minutes or until brown on both sides. Remove; set aside. Cook onion, celery, pecans, jalapeno peppers, sage, rosemary, and black pepper for 5 minutes.  Set aside.

Combine stuffing mix, vegetable mixture, and broth in a medium bowl.  Stir in egg. Spoon stuffing mixture into a slow cooker. Arrange pork on top. Cover and cook for about 5 hours or until pork is tender.

Tip: If you prefer a moister dressing, increase the chicken broth to 1 ½ cups.
